2 c. sifted all-purpose flour
½ tsp. baking soda
¼ tsp. nutmeg
½ tsp. salt
½ c.soft shortening
1 c. granulated sugar
½ tsp. lemon extract
1 egg yolk
½ c. buttermilk or sour milk
½ tsp. vanilla extract
1 egg white, beaten stiff

Preheat oven to 350.
Sift together the flour, baking soda, nutmeg, and salt. Set aside. In a mixing bowl, mix together shortening, sugar, and egg yolks until fluffy. Mix in the flour mixture alternately with the buttermilk, then mix in the vanilla and lemon extract. Fold in the stiffly beaten egg white. Drop by rounded teaspoonful 3” apart onto a greased cookie sheet. With a spatula, flatten to ½” thickness. Bake for about 20 minutes.
