1 pound bittersweet or dark chocolate
2 1/2 cups heavy whipping cream
pinch of salt
1 Tbsp vanilla extract (or rum)

Directions:
Heat the cream in a saucepan until just bubbling. Pour hot cream over chocolate in a bowl. Let sit 10 minutes. Add salt and vanilla and stir until combined.

Refrigerate for 1 hour or up to 24 hours, until firm. Beat the ganache at medium speed until softer and lighter, about 2 minutes.
