14 ounces dried white beans
3 tablespoons olive oil
1 carrot, chopped
1 onion, chopped
1 green pepper, chopped
1 red pepper, chopped
9 ounces chorizo sausage, sliced
1 teaspoon smoked paprika
2 teaspoons thyme
1/2 cup chopped parsley
Salt and pepper to taste
1 can (14 ounces) diced tomatoes
1 cup chicken stock

Directions:
Directions:
Soak the dried beans in a large bowl, filled with water and 1 tablespoon salt. Rinse them well, and boil them in a pot filled with water until soft and tender. Rinse well, and set aside.

Transfer the olive oil, carrot, onion, peppers, and chorizo to a large skillet. Cook over medium high heat until the vegetables are soft, about 10 to 15 minutes. Add the spices, tomatoes, stock, and beans. When it starts to boil, reduce heat to low. Simmer 15 to 20 minutes or until the sauce has thickened.
