Nanny's Dressing Recipe

Cornbread (cooked day before)
6 stalks celery
1 large onion
1 stick butter
Salt, to taste
Pepper, to taste
5 slices old white bread
5 slices old wheat bread
4 cans chicken broth, may not use all
6 eggs
Deep 9 x 13 aluminum pan for baking, greased

Directions:
Directions:
Chop onions and celery and put in large stockpot. Add salt and pepper to your taste and 1 stick of butter. Cover mixture with water. Let mixture come to a boil and turn on low to simmer. Let simmer approximately 1 - 2 hours until veggies are very tender, mushy even. Toast white and wheat bread. In large mixing bowl, break up cornbread and toast mixing well. Pour celery and onion mixture over bread and cover bowl. Let sit for about 4 - 6 hours - this allows everything to soak into the bread. Mash everything with a potato masher adding chicken broth for moisture. Add chicken broth slowly and mash up in between additions. You can also use this step to generously salt and pepper the mixture. (The mixture will need to be a bit on the loose side before cooking - a little jiggly, but not runny). Add in eggs and use potato masher again to combine well. Pour mixture into greased pan and bake at 325º for 45 minutes. Check for doneness by inserting a knife into middle of pan. If knife doesn't come out clean, continue baking at 15 minute intervals checking for doneness.
Once the knife comes out clean, dressing is done.
 

Cornbread


Ingredients:

1 ½ cups corn meal
1 ½ cups self rising flour
2 tablespoons oil or baking grease
Salt, to taste
Pepper, to taste
Greased large cast iron skillet

Directions:
Directions:
Mix all ingredients well and pour into greased cast iron skillet. Bake at 350º for 45 minutes to an hour. Top should be golden brown.
