8 to 10 small bone-in chicken thighs
1 1/2 teaspoons salt
3/4 teaspoon smoked paprika
1/4 teaspoon granulated garlic
1/2 teaspoon pepper
2 tablespoons olive oil

Directions:
Directions:
Line a baking sheet with aluminum foil, and place a wire rack over it. Place the chicken, side down, on the rack. Stir the spices together in a small bowl. Sprinkle half the spices over the chicken. Turn the chicken over, skin side up,, and drizzle with the oil and sprinkle with the remaining spices.

Place the chicken in the centre of the oven, and roast at 400º for about 50 minutes, or until the skin is crisp and golden and the chicken is cooked through. Allow the chicken to rest for 10 minutes before serving.
