1 cup plus 2 Tbsp. all-purpose flour
½ tsp. baking soda
8 Tbsp. (1 stick) unsalted butter, softened
½ cup sugar
½ cup packed light brown sugar
1 large egg
¼ tsp. salt
1 ½ tsp. vanilla
1 cup semisweet chocolate chips
¾ cup chopped walnuts or pecans (optional)

1. Preheat the oven to 375º. Grease two cookie sheets with butter or cooking spray.

2. Whisk together the flour and baking soda in a medium bowl.

3. Add the butter and two sugars to a large bowl and beat until well-blended.

4. Add the egg, salt, and vanilla to the wet ingredients and beat until combined.

5. Add the dry ingredients to the wet ingredients and stir with a wooden spoon or spatula until smooth and no dry spots remain. Then stir in chocolate chips and nuts (if using).

5. Drop the dough by heaping tablespoons onto the cookie sheets, about 2 inches apart. Bake, 1 sheet at a time, until the cookies are slightly colored on top and rimmed with brown (10-14 minutes). Remove from the oven and place the sheets on a rack for a few minutes until cookies firm up, then remove cookies to a rack to cool completely (or serve warm). Store in an airtight container.

This basic chocolate chip cookie recipe is adapted from The Joy of Cooking. It makes cookies that are soft in the middle and crispy on the edges. I like to make the cookies a little bigger, which means they have to cook for longer. If you prefer traditional teaspoon-size, they may only need 8 minutes to cook.
