2 c. flour + 2 tsp. more for tossing with strawberries
2 tsp. baking powder
3/4 tsp. salt
1/2 c. unsalted butter, softened
1 c. granulated sugar
2 large eggs
1 1/2 tsp. vanilla extract
1/4 tsp. almond extract
1/2 c. milk
2 1/4 c. diced strawberries
2 T. brown sugarnfor topping

Preheat oven to 375 degrees. Line a 12 cup muffin tin with paper liners and spray liners with non-stick cooking spray.
In medium bowl, whisk together flour, baking powder and salt.
In mixer bowl, beat butter and granulated sugar for about 2 minutes. Add the eggs, one at a time, beating well after each addition. Beat in vanilla and almond extracts. (Batter may look a little grainy but that's O.K..)
With mixer on low add the flour mixture in three separate additions, alternating with the milk and ending with the flour.
Toss the strawberries with the 2 tsp. flour (this will keep them from sinking to the bottom).Set 1/2 c. berries aside. Add the berries to the batter and fold with a spatula until evenly distributed.
Scoop the batter into the ;prepared muffin tins; they will be very full. Scatter the reserved berries evenly over the muffins, them sprinkle the brown sugar over the center of each muffin.
Bake for about 30 minutes until lightly golden and a cake tester comes out clean Run a sharp knife around the top edge of each muffin to free it from the pan if necessary and let muffins cool in pan for about 25 minutes. Transfer to a rack to cool completely.

I had some extra berries around one week and didn't want them to go to waste so I looked up this recipe on the internet. It's a really special muffin with an excellent texture.
