1 tablespoon olive oil
1 pound boneless, skinless chicken breasts
2 tablespoons taco seasoning
1 teaspoon cajun seasoning
Salt
2 cloves garlic, minced
1 small onion, chopped
2 red peppers, chopped
1 can (15 ounces) black beans, rinsed and drained
2 cups shredded cheddar cheese

Directions:
Directions:
In a large skillet over medium high heat, heat oil. Season chicken with spices. Add chicken, and cook until golden and cooked through, 8 minutes per side. Transfer to a plate.

Add garlic, onion, and peppers to the skillet. Cook until soft, about 5 minutes. Stir in black beans until warmed through. Then transfer mixture to a plate.

Reduce heat to low, and return chicken to skillet. Top with cheddar and black bean mixture. Then cover, and let cheese melt.
