4 halloumi cheese slices, ¼ in (6 mm) thick
olive oil for greasing

Vinaigrette:
2 Tbsp (25 ml) olive oil
1 Tbsp (15 ml) fresh squeezed lemon juice
! Tbsp (15 ml) fresh mint, minced
1 fresh red chili pepper, seeded and minced
2 Kalamata olives, sliced

Directions:

1. Heat a large skillet over high heat. Brush both sides of the halloumi with olive oil and place on the hot skillet. Cook cheese on both sides until it has a golden brown colour, 1 to 2 minutes per side. Transfer grilled cheese to a serving platter.
In a separate small bowl, whisk the vinaigrette ingredients together. Drizzle over the cheese. Serve warm as is, or on crackers
