3 lbs. best quality tomatoes, cored and chopped
2 cups sugar or stevia
1/4 cup freshly squeezed lemon juice
1 Tbsp. freshly grated ginger
1 tsp. red pepper flakes
1 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. cumin
4 garlic cloves, chopped
1 1/2 Tbsp. chopped spring onion

Directions:

Combine all the ingredients in a heavy-bottomed pot and bring to a boil over medium-high heat, stirring frequently. Reduce heat and simmer until the mixture reaches a thick, jam like consistency, about two and a half hours.
This jam can also be made in an Instant Pot and turns out just as good.
Ladle the hot jam into hot sterilized jars, leaving 1/4 inch head-space. Wipe rims of the jars, cover with lids and tighten. Place jars on rack in pot and cover completely with water. Cover and bring to a boil. Remove and let stand until fully sealed.
