2 1/2 cups all purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
1 Tbs baking powder
1/2 tsp salt
1 egg
1 1/4 cup milk
3 Tbs cooking oil
1/2 tsp almond extract
1 cup sweet cherries, pitted and chopped
2/3 cup chopped almonds

Directions:

Heat oven to 350F.

Prepare a loaf pan with spray or parchment paper.

In large bowl stir together flour, granulated sugar, brown sugar, baking powder and salt.

In separate bowl stir together egg, milk, oil and almond extract until well combined.

Add wet mixture to flour mixture and stir until just moistened.

Fold in cherries and almonds.

Pour into prepared pan.

Bake about 1 hour or until toothpick comes out clean.

Let cool and wrap in foil and refrigerate overnight before slicing.

This recipe appeared in the Spectator during cherry season and I ended up making a loaf and muffins. (It makes 12 muffins baked at 350F for 30 minutes or until toothpick comes out clean). It's a bit time-consuming pitting the cherries without a pitter, but I used a knife and did two cuts about the cherry and just dug the pit out. The loaves and muffins freeze beautifully in freezer bags.
