Rice Krispie Treats

3 Tbs unsalted butter
5 cups mini marshmallows (or 40 regular)
1/2 tsp vanilla
6 cups Rice Krispies

Variations:

Almond Joy Treats - Stir 1 cup toasted sweetened shredded coconut, 1 cup toasted sliced almonds, and 1/2 cup semi-sweet chocolate chips into cereal mixture.

Chocolate-Cherry Treats - Add 1/2 cup white chocolate chips to marshmallows. Stir 1 cup dried chopped cherries into cereal mixture. Drizzle melted chocolate chips over cooled treats and let set for 15 minutes before cutting.

Chocolate Caramel Turtle Treats - Add 1/2 cup chocolate chips to marshmallows. Stir 4 1/2 oz. soft caramels quartered, and 1 cup toasted pecans, chopped into cereal mixture. Drizzle melted chocolate chips on cooled treats and let set for 15 minutes before cutting.

Microwave butter 30-60 seconds in a large glass bowl

Add marshmallows, tossing to coat.

Microwave 1 - 1 1/2 minutes, stirring after 45 seconds.

Stir in vanilla.

Add cereal.

Press into 9 x 13 inch buttered pan.

I find buttering your fingers while working with the sticky cereal really helps when pressing it into the pan. Refrigerate for at least an hour before cutting into squares. These freeze really well. I haven't actually tried any of the variations, but they look interesting!
