If I am making a really big pot I like to use on hen & one chicken. Boil chicken in water & seasonings; salt, pepper, onions (what ever ones you like). Cool chicken and debone then add back to broth. I like to add some chicken bouillon to add flavor.

DUMPLINS
Do it like you are doing biscuits except use just self rising flour and water (do not use oil or milk) Pinch a little piece at a time and roll out paper thin. You kinda have to play with the amount you will need. If I am taking a really big Magnalite pot I roll out three cookie sheets with three rows on each. You can make the night before and cover with foil and put in fridge.

Get the broth to boiling and then add the dumplings. If you need to dir do it very gently. After you add all the dumplings put the lid on and let cook for about five minutes. If the juice is too runny take a little of the flour on the cookie sheets and put in dumplins.

Add salt & pepper.
