3 cans black beans, drained and rinsed
3 ears of corn or 3 cups frozen corn cooked
1 small green pepper diced
1/2 red onion diced
1 pint grape tomatoes, halved
1 orange or red bell pepper diced
1 small bunch cilantro (or parsley), chopped

Dressing

3 limes, squeezed
1/4 c olive oil
1 tsp cumin
1/2 tsp ancho chili powder ( or a couple of tsp of hot sauce)
1/4 tsp garlic powder or 2 cloves of garlic chrushed

Directions:
Directions:
Drain and rinse beans. Cook the corn. Combine everything with the dressing. Marinate for a couple of hours

If you like things spicy--add a couple of Jalepeno pepper diced fine.

In corn on the cob season, try roasting the corn in the husks on the grill for about 30 minutes. It give the salad a nice smoky flavor.
