3 chicken breast (cubed)
2 Tablespoons olive oil
10 ounce pkg. chopped broccoli fresh or frozen
2 Cups shredded carrots
2 garlic cloves finely chopped
1 small onion finely chopped
1 Tablespoon chicken bouillon
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon pepper
1 can cream of chicken soup
1 soup can of milk
1/4 Cup dry white wine
2 Cups grated Mexican blend cheese

Preheat oven to 350 degrees
In a pan heat olive oil over medium heat, add onions and sauté until translucent about 4 minutes. Add the garlic and cook a couple of minutes, add the diced chicken and season with bouillon, garlic and onion powder and pepper, and sauté until cooked through about 5 minutes. Add the carrots and cook 3 minutes, then add the broccoli and cook another 4 minutes. Turn off heat and set aside.
Mix soup, wine,1/4 cup cheese and milk in a saucepan until ingredients are warn and cheese is melted, add a pinch of bouillon and combine.
Fill each crepe (uncooked side out) with the chicken and broccoli mix, and add a bit of cheese. Roll up the crepe, and put seam side down in a baking dish that has a layer of the soup mix on the bottom.
Spread remaining sauce over crepes. Sprinkle with another 1/4 to 1/2 cup cheese.
Bake at 350°F for 15-20 minutesuntil cheese is melted and bubbly.
