1 lb fresh white ocean fish (tilapia, basa, sole, cod, shrimp, halibut, ect), cut into 1/4 to 1/2 inch cubes
6 limes, juiced
4 lemons, juiced (the combined juice from the lemon and lime should equal 1 Cup of liquid)
1-2 Cups water
1/2 Cup red onion, finely chopped
1/4 Cup cilantro finely chopped
Kosher salt

For the ceviche; in a glass bowl (so I can see the fish is cooked) I do a lemonade with water, lemons and lime. Add a little salt. Taste the water. Kind of same proportion of a sweet lemonade but instead of sugar you add salt. Enough to cover the amount of fish you will be using. It can be tilapia, basa, sole, cod, shrimp, etc. Then add chopped cilantro and red onion to your liking . I add a lot so in each bite I get cilantro and onions. Cover with plastic wrap and put in the fridge for a couple of hours till you see the fish is cooked. It last for a week in the fridge.
