3 garlic cloves minced

1 tbsp chopped fresh rosemary or 1 tsp dried

3/4 tsp. salt

1/4 tsp. black pepper

1 (1 1/4 lb) boneless center-cut pork loin roast, trimmed

2 tbspn apricot jam

2 tbspn dijon mustard

preheat ovento 400º.

lightly spray roasting pan with nonstick spray.

stir together the garlic, rosemary, salt and pepper in small bowl. rub mixture over the portk. place the pork in the prepared pan and roast 30 minutes.

stir together the jam and the mustard in a small bowl and brush all over the pork. continue to roast the pork until an instant read thermometer (or probe) inserted into the center registers 160º for medium, about 10 minutes longer.

transfer to cutting board and let stand 10 minutes.

cut the roast into 12 slices.

for extra:
toss 1 pound scrubbed baby or halved fingerling potatoes with a little rosemary, salt, and pepper, and lightly spray with nonstick spray. scatter in the roasting pan around the pork and roast until tender. this will increase the per-serving points value by 1.
