3 lbs. yellow summer squash
½ cup cracker crumbs (saltines)
2 eggs
1 stick butter
1tbsp. sugar
1 tsp. salt
1 tsp. pepper
½ cup chopped onions
1-1/2 cup sharp cheddar cheese


Directions:
Directions:
Wash, cut up, and boil squash about 10-15 minutes until tender. Add all except ½ of the butter and crumbs to the squash. Melt remaining butter. Pour mixture in to buttered casserole dish. Bake at 375 degrees for 1 hour or until brown on top.
**** Also sometimes I put shredded cheese on top of squash casserole.
