2 c. unsifted, all-purpose flour

1 tsp. sugar
½ c. margarine
4 or 5 T. cold water
1 tsp. vinegar
1 qt. corn oil for frying

4 T. sugar
4 tsp. corn starch
½ tsp. cinnamon or nutmeg
⅛ tsp. ginger

Directions:
Directions:
1. In a bowl, combine flour, nutmeg, salt, and sugar. Cut in the margarine with a pastry blender until mixture is well mixed and crumbs form.
2. Sprinkle water and vinegar over mixture while tossing to blend. Press dough firmly into ball with hands. Chill about 1 hour.
3. While the dough is chilling, make the filling: peel the peaches, and coarsely chop. Combine the fruit, Fresh Fruit, sugar, corn starch, cinnamon, and ginger. Set aside.
4. After dough has chilled, divide dough into 10 even portions, rolling each portion out to a 5” circle. Place 2 T. filling in each circle. Moisten edges of pastry with water, fold over half of pastry to cover filling, seal, pressing edges together with a fork.
5. Pour oil into a heavy fryer or skillet, filling pan no more than ⅓ full. Heat over medium heat to 375º.
6. Carefully put several pies into hot oil, and fry until golden brown, 5-7 minutes on each side.
7. Drain on absorbant paper, then sprinkle with confectioners’ sugar.
