2 tsp. vegetable oil

1 onion sliced thin

1/2 med red or green cabbage very thinly sliced

1/2 cup apple juice

1 tbsp. apple cider vinegar

2 tsp. sugar

1/4 tsp. salt

1 bay leaf

1 granny smith apple shredded

Directions:
heat oil over med high heat. add onion and cook stirring frequently, until softened, about 5 minutes.

stir in cabbage, apple juice, vinegar, sugar, salt and bay leaf; cook, covered until cabbage is very tender about 20 minutes.

discard bay leaf and stir in apple, cook uncovered until apple is tender about 5 minutes.
