1 cup skim milk

3/4 cup flour (all purpose)

2 large eggs

1/8 tsp. salt

in blender combine all ingredients & process until smooth. let stand 15-20 mins.

lightly spray 8 inch nonstick skillet with cooking spray and heat. (to test sprinkle skillet with drop of water.. if water sizzles skillet is hot enough).

pour 1/8 of batter into skillet and quickly swirl batter so that it covers entire bottom of pan, cook over med-high heat until edges & underside are dry.

using pancake turner carefully turn crepe over, cook other side briefly just to dry, about 30 seconds. slide crepe onto a plate and let cool.

repeat using remaining batter.

to freeze stack cool crepes using 2 sheets wax paper ( or 1 sheet folded in half) between each to separate, wrap stack in moisture and vapor resistant wrapping and label.
