2 ½ cups all-purpose flour
2 tsp. baking soda
1½ tsp. salt
1 egg
½ cup clam juice
¼ cup milk
6 oz. chopped clams or quahogs (with juice)
2 cups peanut oil

Directions:
Directions:
Sift together dry ingredients and set aside. In a medium bowl mix egg, clam juice and milk. Stir in clams. Add dry ingredients, a little at a time, stirring well until the mixture forms a sticky ball. Drop by tablespoons into hot peanut oil. Test the oil first by dropping a small amount in the oil about the size of a dime. If it sizzles rapidly, then it’s hot enough to fry the clam cakes. Fry until brown,. Drain on paper towels.

When I was a kid Mum and Dad would take us to the Rocky Point amusement park where they sold these clam cakes and when we got there they were the first thing I would buy.
