Yield: 2 casseroles, 6-8 servings each
4-1/2 c. Seasoned Croutons
2 c. (8 oz) Shredded Cheddar Cheese
1 Med. Onion, chopped
1/4 c. Sweet Red Peppers, chopped
1/4 c. Green Peppers, chopped
1 jar (4-1/2 oz) Sliced Mushrooms
8 Eggs, whisked
4 c. Milk
1 tsp. Salt
1/4 tsp. Pepper
1 tsp. Ground Mustard
8 strips Bacon, cooked & crumbled

Directions:
Sprinkle croutons, cheese, onions, peppers & mushrooms into 2 greased 8" square baking dishes.

I large bowl, combine eggs, milk salt & pepper. Slowly pour over vegetables & sprinkle with bacon. Cover and freeze one casserole for up to 3-months.

Bake second casserole uncovered at 350 degrees fro 45-50 minutes, or until knife inserted into bake comes out clean and serve.

For frozen casserole, thaw completely in refrigerator for 24-36 hours. Remove from refrigerator 30-minutes, then bake as above directed.
