Clam Chowder Recipe

1 large onion, chopped
4-5 potatoes, cubed
2-3 stalks celery, sliced or chopped
olive oil
salt and pepper
soup crackers

1 large can clam juice or
- 4 (8oz.) bottles Snow's Clam Juice or
- fresh clam juice from fish market
4 (6.5 oz.) cans Snow's Chopped Clams or
- 2 lb. minced clams from fish market
water as needed to increase clam juice

Directions:

1. Spray bottom of saucepan with cooking spray and coat with olive oil.
2. Sauté first 3 ingredients for 3-4 minutes. Keep stirring.
3. Pour clam juice over vegetables and bring to a bubble. Lower to simmer.
4. Add salt and pepper. Add water as needed to increase broth.
5. When potatoes are almost cooked, add minced claims and heat.
6. Do NOT overcook as the clams get tough.
7. Taste for tenderness and flavor. Serve with soup/oyster crackers if desired.
 

Red Clam Chowder

Pastene Kitchen Ready tomatoes

Same directions as for clear chowder.
At step 3 when adding clam juice, also add crushed tomatoes according to how red you prefer the broth.
 

Fish Stew


Ingredients:  
Ingredients:  
1 onion, thinly sliced
2 garlic cloves, chopped
3-4 stalks celery, sliced
6 carrots, sliced
5 medium potatoes, cubed
3 lb. haddock or scrod, cut into 4" pieces
1 lb. chopped clams
2 lb. bay scallops (optional)
1 bag frozen salad shrimp (optional)
1 large can clam juice
olive oil
salt and pepper
water as needed to increase clam juice

Directions:

1. Spray bottom of pan with cooking spray. Coat bottom of pan with olive oil.
2. Sauté onion, garlic, celery and carrots. Stir to coat with oil for a few minutes.
3. Add clam juice and water as needed to cover vegetables.
4. Add sea salt and pepper. Bring to a boil. Then lower heat and simmer.
5. When carrots are beginning to get tender, add potatoes.
6. When potatoes are beginning to get tender, add bay scallops and shrimp if using.
7. Continue to simmer. When carrots are just tender to bite, add haddock or scrod to top of stew. Press down gently to cover with liquid.
8. Allow fish to cook until done without breaking apart.

Grandpa makes these recipes often. Clams have iron which is an important part of one's diet. Grandma prefers the Fish Stew. As with the chowder, tomatoes can be added to the Fish Stew. Use diced or chopped whole tomatoes for the stew.
