2 eggs separated (3)
1 cup sugar (1½)
½ cup shortening ( ¾ )
¼ tsp. salt (¼ +)
1 tsp. vanilla (1½)
1½ cups sifted flour (2¼)
1 tsp. baking powder (1½)
1/3 cup milk (½)
1½ cups fresh blueberries (2¼)
Cream of tartar if needed**

Take a bit of the flour called for in the recipe and
gently shake blueberries in it so they won’t settle.

Measurements are for an 8x8 inch pan.
Measurements for a 9x13 inch pan are in parenthesis.

Directions:
1. Preheat oven to 350º. Spray pan with baking spray.
2. Beat egg whites until stiff. Add about ¼ cup of the sugar to keep them stiff.*
3. Cream shortening, add salt and vanilla. Add remaining sugar gradually.
4. Add unbeaten egg yolks and beat until light and creamy.
5. Add sifted dry ingredients, alternately with the milk.
6. Fold in beaten egg whites. Fold in fresh blueberries.
7. Bake in greased pan for 50-60 min.

**Use ⅛ tsp. of cream of tartar for every egg white

This is a favorite cake that Grandma would bring to work for the staff and Doctors. Back in the 1970's Mary M., a neighbor on Tyndall Avenue, made the cake for us. It was a big hit. Grandma has made it ever since. It is filled with juicy sweet blueberries and is perfect for breakfast, brunch, snacking, or dessert.
