3/4 C. Butter
1 C. White Sugar
1 C. Dates - Chopped
2. t. Baking Soda
1. C. Hot Water
! C (+ 2 Tablespoons) Flour
3. Eggs
2. t. Ground Ginger
2. t. Baking Powder

SAUCE

1 C. Demerara Sugar
1/2. C. Butter
1. Pint Whipping Cream

PUDDINGS
1. Cream butter and white sugar together
2. Add eggs one at a time, add flour, baking powder and ginger
3. Put water in pot, add chopped dates and bring to boil. Remove from stove and add baking soda - it
will foam up.
4. Add date mixture to flour and egg mixture and mix well
5. Place parchment paper muffin liners in muffin pan or grease muffin pan (it will make about 8 muffin
size puddings)
6. Bake at 350 degrees for 30 min


SAUCE
1. Melt putter and sugar in a pot. Add whipping cream and bring to a boil - s9immer for 5 minutes.
2. Serve warm under and over muffins
3. Serve with rich creamy ice cream as well
