2 large eggs
1/2 cup Brown sugar, tightly packed
1/2 cup honey
1/2 cup canola oil
1 1/2 teaspoon pure vanilla extract
1 1/2 teaspoon baking powder
2/3 cups dark cocoa powder
1 2/3 cups flour
1/2 teaspoon salt
2 cups shredded zucchini
1/2 cups chocolate chip

Directions:

In a large mixing bowl, cream eggs and brown sugar for 3 minutes. Add oil, honey, vanilla and heat 3 minutes more. In another bowl with in flour, cocoa powder, salt, flour and baking powder. Mix dry ingredients into wet until just incorporated. Do not over mix. Hand mix in zucchini and chocolate chips. Grease and flour a loaf pan. Pour in batter. Cook in preheated 350º oven.Cook for 50 minutes. Check by inserting a toothpick inserted into center. It should come out clean. Cook for another 10 minutes if it doesn't. Cool in pan for 10 minutes before turning out onto serving tray. I also melted white chocolate and added it on top.

I use Hershey's special dark cocoa powder and their chocolate chips for the best flavor.
