1¾ c. all-purpose flour
1 c. unsalted cashews,very finely chopped
1 c. butter, softened
½ c. sugar
¼ c. cornstarch

About 4 hours before serving, or up to 1 week ahead: Into large bowl, measure all ingredients. With mixer at low speed, beat ingredients just until blended, occasionally scraping bowl with rubber spatula. Increase speed to medium. Beat until well mixed. Divide dough in half. Wrap each half with plastic wrap. Refrigerate dough until easy to handle, about 2 hours. Or place the dough in freezer for 40 minutes.
Preheat the oven to 350º. On a lightly floured surface with floured rolling pin, roll half of dough into 9”x6” rectangle, keeping remaining dough refrigerated. With knife, cut dough lengthwise into 4 strips. Cut each strip crosswise into six 1½” squares. With the dull edge of knife, mark crisscross design in tops of cookies. Place cookies, about 1” apart, on ungreased cookie sheet. Repeat with remaining dough.
Bake cookies10-12 minutes until edges are lightly browned. Remove cookies to wire racks to cool. Store cookies in tightly covered container to use up within 1 week.
