For the batter:
2 1/4 cups sugar
2/3 cups vegetable shortening
2 large eggs
2 teaspoon pure vanilla extract
1/4 cup milk
4 cups flour
1 1/4 cups dark cocoa powder. Use Hersheys Special Dark
2 1/2 teaspoons baking soda
2 teaspoon baking powder
For Cream Filling:
3 cups milk
9 tablespoons flour
1 cup butter
2 1/4 cup sugar
1 teaspoon pure vanilla extract

In a sauce pot whisk milk and flour over medium heat until it thickens. About 5-7 minutes. Set aside to cool. In a large mixing bowl cream sugar, butter and shortening. Heat several.minutes until it becomes fluffy. Scrape bottom of bowl.and then mix in vanilla. Heat in thickened milk mixture. Beat again several minutes. Chill several hours as this is your cream filling.
Preheat oven to 375º. In a large bowl.cream sugar with shortening. Add eggs and heat until it becomes creamy. Mix in vanilla. Add dry ingredients and milk. This batter is thick. On a baking tray lined with parchment paper, draw circles using a cups bottom as guide. About a 2" circumference . Place 6 circles on each try allowing room between each circle. Lightly spray with non stick spray. Drop batter in the circles and spread to about 1/4" of circles edges. This allows spreading during baking. Bake about 17 minutes. Toothpick inserted into center comes out clean when done. Cool cakes on wire racks while making the rest of the batch. To assemble, pick two cakes that are closest to size. Place filling on flat side of one cake and top with other. Chill assembled pies about 2 hours before serving.

It took many tries to come up with the perfect tasting cake and the perfect tasting filling. I finally got it. I hope you enjoy. You definitely need a cold glass of milk while enjoying these.
