Steak Rub:
½ tsp kosher salt
½ tsp black pepper
1 tsp cumin
½ tsp paprika
⅛ tsp cayenne pepper

2 lbs boneless ribeye steak, almost room temperature

Fajitas:
2 tbsp grapeseed oil
2 red bell peppers, sliced (2 cups)
1 yellow bell pepper, sliced (1 cup)
1/2 red onion, sliced (½ cup)
8 oz button mushrooms, sliced (2½ cups)
1 tsp ground cumin
¼ tsp kosher salt
½ tsp black pepper
½ tsp cayenne pepper
1 avocado, peeled, pitted and sliced

Directions:
Directions:
1. In a small bowl, combine steak rub ingredients. Thoroughly season steaks on all sides with rub.
2. In a skillet, heat olive oil over medium-high heat. Arrange steaks in skillet to sear one side (about 4 minutes) before flipping.
3. Cover skillet, reduce heat to medium-low, and cook steaks 5 minutes for medium rare (145ºF recommended internal temperature). Set aside to rest, then slice into strips.
4. In another large skillet, heat oil over high heat.
5. Add the bell peppers and onion. Cook, stirring frequently, until peppers are cooked but not limp, about 4 minutes.
6. Add steak and mushrooms and stir to combine.
7. Season fajitas with cumin, salt, black pepper, and cayenne pepper.
8. Serve fajitas with sliced avocado.
