2 tbsp olive oil
1 garlic clove, minced
½ red onion, sliced (½ cup)
1 bell pepper, thinly sliced (1 cup)
1 large zucchini, diced small (2 cups)
2 carrots, peeled, shredded (⅔ cup)
½ tsp cumin
1 tsp oregano
¼ tsp kosher salt
Dash of black pepper

Directions:

1. Heat a large nonstick skillet over medium heat and add oil and garlic; sauté for 1 minute.
2. Add onion, bell pepper, zucchini, and carrots and cook for 3-4 minutes.
3. Add cumin, oregano, salt, and pepper and stir until heated through.
