Any amount or kind of fish can be used in this do-ahead casserole; Haddock, Halibut, Cod, Scallops or Lobster or any combination.

4 Tbsp butter
4 Tbsp. flour
2 cups milk or half and half cream
3 Tbsp. white wine
Grated cheese

Directions:
Directions:
1). Boil together fish to be used - about 8 minutes

2). Make a white sauce with butter, flour and milk or cream. Slowly add wine, stirring constantly until thickened
Season well with salt and pepper.
3). Combine cooked fish and sauce in a buttered casserole. Sprinkle with cheese and paprika.

4). Bake at 300º for 25 minutes
