Notes: Passover is a Jewish holiday that lasts for 8 days. During this holiday, we commemorate and celebrate the Jewish people's freedom from slavery in Egypt thousands of years ago with G-d's direction and Moses' assistance.
After G-d inflicting 9 plagues on Pharoah and Egypt in order to have him let the Jewish people go, the 10th and final plague wherein the Pharaoh ordered the death of the first-born, not knowing that by his mouth, this plague would not only affect the Jewish people but the Egyptians as well. When the Pharoah's son fell victim to the final plague, he agreed to let the Jewish people go.
In order to flee as soon as possible, the mass exodus of Jewish people took as many possessions as possible, and did not even have time to let their bread dough rise. It baked on their backs in the hot sun and became matzo, which is flat, unleavened bread.
it is for this reason that during the eight days of Passover, Jewish people do not eat any product containing yeast or bread products.
My mom, who I think got this recipe from her mother (my grandmother), Rebecca Chapnick, was trying to emulate a regular bagel but made from Kosher for Passover products like Matza Meal. You can cut it open like a bagel and shmear butter or jelly on it or even make a sandwich. It really doesn't taste like a bread bagel, but it is a good substitute if you are in dire need of a "bread" fix!!
