1/4 cup finely chopped onion
3 cloves minced garlic
1 teaspoon crushed red pepper flakes
1 tablespoon butter
1 1/2 tablespoon flour
1 1/4 cup half and half
4 ounces cream cheese
1 teaspoon salt
1 pinch of nutmeg
1 pound bag of frozen spinach/ thawed and all liquid squeezed out
1/2 cup shredded Romano cheese
2 teaspoon hot sauce

Directions:
Directions:
In a large pan saute pan over medium heat, cook the onion, garlic, red pepper flakes in butter. Whisk in flour. Cook for 3 minutes. This cooks out raw flour taste. Whisk in the half and half. Bring to a low boil. Keep whisking until thickened. Reduce to low. Add in cream cheese, hot sauce and nutmeg. Stir in spinach and 1/2 of Romano cheese. Place into serving dish and sprinkle with remains cheese.
