2 Tbsp vinegar
1 tsp salt
black pepper
1/4 cup oil
6 ears fresh corn, cut off the cob
1 large tomato, chopped
1 bunch scallions, sliced thin
8 ounces mozzarella pearls
fresh basil, thinly sliced

Directions:
Directions:
Whisk the vinegar, salt and pepper in a bowl. Gradually whisk in the oil to make a smooth dressing. Add remaining ingredients to the bowl and toss to coat. Cover and let sit for 15 minutes or up to 2 hours. Before serving sprinkle with basil.
