1½ lb baby potatoes
carrots
pearl onions peeled
3½ lb chuck roast
salt & pepper
1 Tbsp corn starch
2 Tbsp water
2 Tbsp Worcestershire sauce

Directions:
Directions:
In crock pot place potatoes, carrots, pearl onions, chuck roast salted and peppered. Mix cornstarch and water together and place over roast. Place Worcestershire sauce in crock pot. Place two sprigs of fresh thyme and oregano on top of roast and cook on high for 5 hours. Remove seasoning before removing from crockpot. Can serve on with broth and on bread as pot roast sandwich.

Kevin and Tracey took a long weekend and visited Mt. Rushmore and also other local sites of the Keystone area. While there, I took Kevin on his first camping/glamping adventure. It was "Under Canvas" which is one of several national park sites that people can camp while enjoying our nation's beauty, and leaving little to no footprint.
