1 pound box of orzo pasta
2 red bell peppers, seeded and small diced
3/4 cup kalamatta olives, pitted
6 green onions, thin sliced
6 ounce crumbled feta cheese
1/4 cup red wine vinegar
1 teaspoon salt
1 teaspoon black pepper
3 cloves garlic, minced
1 anchovy fillet, finely chopped
1 teaspoon red pepper flakes( optional)
1/4 cup freshly chopped parsley

Directions:
Directions:
Prepare orzo according to package directions. Drain. Set aside. In a large bowl mix garlic,anchovy, oil and vinegar. Red pepper flakes too if using them. Toss in pasta, onions, peppers, olives and feta. Add in fresh parsley. Mix well. Serve warm or chill several hours before serving.

This salad is delicious, versatile and always a hit. Fresh ingredients. Easy to prepare. Always taste before serving. Any ingredient can be adjusted to your taste. Add cooked chicken to make it a complete meal.
