2 boneless, skinless chicken breasts sliced thin horizontally to make 4 pieces
1/3 cup cornmeal
2 tbsp. taco seasoning
1 egg
1 can whole green chili peppers, cut in half lengthwise
2 ounces reduced fat shredded Mexican cheese
2 tbsp. snipped parsley

Preheat oven to 375º
Rinse chicken and pat dry. Put between two pieces of plastic wrap and pound to 1/4-inch thickness. Sprinkle with salt and pepper.
In a bowl, combine cornmeal and taco seasoning. In another bowl, beat egg.
For each roll, place a chili pepper half on a piece of chicken. Sprinkle with 1/4 of the cheese. Sprinkle with some parsley. Fold in sides and roll up jelly-roll style; secure with a wooden pick.
Dip in egg, then roll in cornmeal mixture to coat. Place rolls, seam sides down, in a shallow baking pan coated with cooking spray. Bake, uncovered, for 25 - 30 minutes.
