1 5-6 pound fresh whole roasting chicken
2/3 cup vegetable oil
1/2 teaspoon fresh chopped cilantro
1 teaspoon each of granulated garlic, ground cumin seed, salt
1/8 teaspoon ground chipotle powder
1/2 large white onion
1 cup fresh cilantro

Heat oven to 350º. Wash fresh chicken under cool running water. Pat chicken dry. In a bowl, mix oil and spices with the 1/2 teaspoon cilantro. This is the rub for the chicken. Take onion and large amount of cilantro and stuff inside cavity of chicken. Take your fingers and lift skin of chicken off breast meat making a pocket. With a spoon, pour 1/4 of rub into each pocket made. Rub the rest over the whole chicken. Roast chicken for 20 minutes per pound. Chicken juices should run clear when cooked. Rest chicken 10 minutes before carving.
