1 pound crab meat
1 egg beaten
1 Tablespoon mayonnaise
1 Tablespoon mustard
Dash of Worcestershire sauce
2 Tablespoons finely chopped parsley
1 Tablespoon Old Bay seasoning
Dash of salt and pepper
1/4-1/2 Cup bread crumbs

In a bowl, mix the egg, mayonnaise, mustard, Worcestershire, parsley, Old Bay and salt and pepper until well blended. Add the bread crumbs 1/4 Cup first. Add the crab meat and mix to combine but don’t over mix. If the mixture looks to runny, you may add a little more bread crumbs, but you don’t want the mixture dry and solid from the bread crumbs, they are used just to bind the mix together. Form into patties using about 1/8 to a 1/4 Cup depending on the size of cakes you want. You can use a heaping Tablespoon to make mini crab cakes.
In a large skillet over medium-high heat, coat pan with oil and heat until shimmering. Add crab cakes and cook, in batches, until golden and crispy, 3 to 5 minutes per side.
Serve with lemon or dill aioli (Recipe in sauces).
