New Year's Pretzel Recipe

½ c. sugar
1 tsp. ground mace
1 c. milk, at room temperature
½ stick of butter, do not use margarine
3 eggs, beaten
2 tsp. salt
2 pkgs. dry yeast
⅓ c. warm water
4½ c. flour

Glaze:
1 1/2 tsp. cornstarch
1/2 c. water

Directions:
Directions:
Mix 1/2 cup sugar, salt, mace in a large bowl; set aside.
Dissolve yeast and 1/2 tsp. sugar in 1/3 cup of warm water.

In a small saucepan, mix milk and butter, heat until melted.
Add milk/butter mix to dry ingredients in the bowl.
Add yeast mixture and beaten eggs.
Stir in flour and cover with a towel.
Set in warm spot until doubled. (1 -2 hours)

Place the entire ball of dough on a floured surface
Knead for several minutes
Divide dough in half
Roll each half into a strip 36 inches long by 1 1/2 inches wide

Place on a greased cookie sheet with smooth side of the dough up and form into a pretzel

Cover and put in a warm place until it doubles in size again.
Bake at 350º F for 15 -20 minutes.
As soon as pretzel is taken from the oven, brush tops with glaze made of
1 1/2tsp. cornstarch and 1/2 cup water boiled together until clear.
