16 cups chopped tomato
4 cups chopped green pepper
2 cups chopped jalapeno pepper
3 cups chopped onion
2 cups chopped carrots
2 cups chopped red pepper (optional)
1 1/2 tsp. Cumin
3/4 cups sugar ( I use a little more sugar)
1 3/4 cups white vinegar
1/2 cup of salt ( I use only 1/4 cup)
2 cans tomato sauce (15 oz.)
2 cans tomato paste (12 oz.) may substitut puree

Mix all the above ingredients and simmer for 2 hours. Fill qt. jars seal with lids and cold pack for 40- 45 min.

Prep time is about 11/2 hours/plus simmering time.

When working with peppers wear protective gloves.
You can make variations to this receipe according to how hot you like it. For hotter salsa add ground red pepper, or add more jalapeno peppers.
