4 T. butter
⅓ c. coarsly chopped green pepper
⅓ c. chopped scallions with some green tops
1 c. celery, coarsely chopped
4 T. flour
½ tsp. thyme
¼ tsp. salt
⅛ tsp. pepper
2 c. boiling water
½ c. milk
2 bouillon cubes
⅓ c. sharp cheddar cheese
2 cans (6½ oz) white albacore tuna, broken up with fork into small pieces
⅓ c. sliced water chestnuts
3 hardcooked eggs, sliced
Small baking powder biscuits

Preheat oven to 425º. In a large oven-safe skillet, sauté the green pepper, scallions, and celery in the butter until vegetables are limp. Stir in the flour, thyme, salt, and pepper until all ingredients well blended. Stir in the boiling water, milk, and bouillon cubes. Cook and stir until is smooth and the sauce comes to a boil. Add the cheddar cheese, and stir until cheese is melted and blended in. Add the tuna, sliced water chestnuts, and hard-cooked eggs. Top with baking powder biscuits. Bake for 15 minutes, until biscuits are done.

I remember this Tuna Fish Pie was one of my favorites growing up on Castle Road. Several years ago I asked Mom if she had the recipe for the tuna casserole we had when we were kids, but she didn’t remember it. I found this when I was going through all her recipes.
