1/2 cup unsalted butter, softened
1 1/4 sugar, divided
zest of 1 lemon
2 Tbs fresh lemon juice
1 large egg
1/2 tsp vanilla
1 tsp baking soda
1/4 tsp salt
2 cups all purpose flour
Directions:
Directions:
Cream butter and 1 cup sugar. Beat until light and fluffy. Beat in zest, lemon juice, egg and vanilla. Slowly beat in soda, salt and flour. Mix until well combined. Cover and chill 2-4 hours. Shape into balls and roll in the reserved 1/4 cup sugar. Place 3” apart on parchment lined baking sheet. Bake in preheated 350º oven 12-14 minutes. Cool 5 minutes before removing to wire rack. Makes 2 dozen
