1 cup sugar
1 cup brown sugar
1/2 cup shortening
2 eggs
1 cup creamy peanut butter
1 tsp vanilla
2 1/2 cups self rising flour

Directions:
Directions:
Cream butter and sugars. Beat in peanut butter, eggs, and vanilla. Stir in flour. Chill dough. Shape into balls and place 2” apart on cookie sheet. Flatten and make criss cross pattern with fork dipped in sugar. Bake in preheated 375º oven for 8-10 minutes. Makes 2-3 dozen.

My favorite cookies growing up and still as an adult. I tweaked her recipe slightly by replacing 1 cup of white sugar with brown sugar as I prefer a softer chewy cookie. I also use butter rather than shortening.
