6 large cooked shrimp. Peeled and deveined
2 slices of white bread. Crusts removed
1 scallion, rough chop
1 clove garlic
1/2 tablespoon corn starch
1 teaspoon soy sauce
1/8 teaspoon salt
Oil for shallow pan trying

Directions:
Directions:
In a food processor, add shrimp, garlic, scallion, corn starch, soy sauce, and salt. Pulse until a fine chop. Do NOT over pulse into a paste. Spread mixture into one slice of bread. Top with other slice. Cut bread diagonally then diagonally again. You want four pieces.
Add oil into a deep sides pan. Heat pan over medium high heat. Once oil comes up to 325º, add shrimp toast. Cook each side just a minute or two. You should achieve a golden brown color. Drain toast points on paper towels until ready to serve.
