1 1/2 lbs. Scallops
Flour
3 T Butter
3 T Oil
3 Cloves Garlic, minced
Salt & Pepper to taste
1 large Tomato, cut in small chunks
1/2 c. minced fresh parsley
Lemon Wedges


Directions:
Directions:
Roll scallops in flour. Heat oil & butter in skillet. Cook scallops 3-5 minutes, tossing. Add garlic, toss, add salt & pepper. Add tomatoes, cook briefly, add parsley & toss. Serve with lemon.
