"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Directions:
Heat oven to 350°. Spread the pecans on a baking sheet and toast them for six minutes or until they are fragrant and their color deepens slightly. In a medium-size bowl, stir together spice mix. In a sauce pan, combine the glaze ingredients and bring to a boil over medium heat, whisking constantly. Stir in the toasted nuts and continue to stir until all the nuts are shiny and the liquid is gone, about one or two minutes. Move the glaze nuts to a mixing bowl, sprinkle on the spice mix, and toss them well to coat. Spread the coated nuts on a cookie sheet and return them to the oven for another four minutes, check regularly to make sure they don’t burn. Remove and let cool. Makes 2 cups
