Ingredients: 1 lb. bread dough ½ (28 oz.) can Pastene Kitchen Ready tomatoes mozzarella cheese, shredded Pecorino Romano cheese, grated 1 large clove garlic, chopped olive oil salt oregano
*toppings - your preference: sliced pepperoni, chopped black olives, anchovies, thinly sliced green or red pepper, mushrooms, etc.

Directions: 1. Preheat oven to 350º. Use a 12x14" pan about 2" deep or a square or round pan. 2. If dough is bought refrigerated, put some flour on a flat plate and slightly dust both sides of dough. Allow dough to rise. (20-30 minutes) 3. Put olive oil on baking pan and let it roll around to cover the bottom of the pan. 4. Place dough on baking pan. Using your fingers stretch dough out in pan. 5. Spread shredded mozzarella evenly on dough. 6. Spoon tomatoes out a little at a time to cover the mozzarella and spread tomatoes across mozzarella. 7. Salt lightly. Scatter garlic over tomatoes. 8. Sprinkle dried oregano lightly over tomato. It has a strong flavor so use lightly. 9. Sprinkle Pecorino Romano cheese over the top. Use a good amount for flavor. 10. You may leave it plain or add any of the toppings* listed above. 11. Lightly drizzle olive oil back and forth across toppings. 12. Place the baking pan on the lower rack of oven first. Check bottom crust. 13. When lightly browned, place on the top rack to cook tomatoes and toppings. 14. When topping looks bubbly, place the pan back on lower rack and brown bottom to desired darkness. 13. Bake approximately 25 minutes. Remove from pan and enjoy! |

Notes: Grandpa always made pizza for many occasions. It was another recipe he learned from Nonna. Originally he would place slices of mozzarella on top. After viewing the cooking program, "Pasquale's Kitchen," Grandpa started using shredded mozzarella and placing it under the tomatoes. He was always complimented and told it was the best pizza ever. It was common to hear someone say, " You should open a Pizza Place." Ironically there is a Balasco's Pizza in Warren which was originally next to DaPonte Bros. Furniture on Child Street.
