Ingredients:
1 lb. frozen peas 1 medium onion, chopped olive oil
S & P to taste ˝ -1 tsp. sugar 5 eggs

Directions: |
Directions:1. Spray bottom of pan with cooking spray and coat with olive oil. 2. Add onion and sauté until translucent. 3. Add frozen peas and stir until peas are coated with oil. 4. Add water to cover peas and bring to slow boil. 5. Add salt, pepper and sugar. Cook until peas are partially cooked. 6. Crack eggs one at a time into a small cup, then drop into pan forming a circle with eggs. 7. Do not move eggs until they begin to solidify. Then gently lift each egg with a wooden spoon or spurtle so they don’t stick to pan. 8. Add small amount of water to keep mixture moist. 9. Allow eggs to cook gently. They should become solid. Gently press with spoon to feel yoke. |

Ingredients: 1 (28 oz.) can Pastene Kitchen Ready tomatoes 1 clove garlic, chopped (onion or both if prefer) olive oil
S & P to taste ˝ -1 tsp. sugar 5 eggs

Directions:1. Spray bottom of pan with cooking spray and coat with oil. 2. Add garlic and sauté lightly. 3. Add tomatoes, salt, pepper and sugar. 4. Allow tomatoes to cook before adding eggs. 5. Follow steps 6-9 in above recipe. |
